The International Food Wine & Travel Writers Association has organized an optional pre-trip to the Seattle area prior to our Conference at Sea on June 25, 2011. Members and their guests on this “Best of Seattle” tour are fortunate to visit the award-winning Chateau Ste. Michelle in Woodinville, Washington and enjoy a hosted wine-pairing small-bites luncheon with the winery’s Culinary Director, John Sarich, author, celebrated chef and restaurateur, and former TV culinary and travel host. Chateau Ste. Michelle was kind enough to share the following information with us.  

Few chefs enjoy access to a greater bounty of world-class wines and fresh foods than Chateau Ste. Michelle’s Culinary Director, John Sarich. “The Pacific Northwest is a chef’s paradise,” says John. “Not only do we have an outstanding variety of ingredients from the land and sea, we also have exceptional wines from Washington’s Columbia Valley, where long summer days and crisp autumn nights produce ideal conditions for well balanced wines.”

John’s innovative approach to pairing food and wine has delighted discriminating palates across the country. At Chateau Ste. Michelle, John conducts cooking classes, wine and food tastings, wine dinners, and special events, all designed to further the enjoyment and understanding of wine and food. He also presents training seminars and classes for wine and food professionals and aficionados around the world. Culinary tours have led John from Disney World in Orlando, to the Culinary Institute of America in New York, to hotels in Singapore, China, Bangkok, and Hawaii, to name a few.

John joined Chateau Ste. Michelle as a winery guide in 1976, the summer the winery first opened its doors. His incredible knowledge and enthusiasm for wine and food quickly became apparent, and before long he was teaching cooking classes in the Chateau’s historic Manor House. Soon after, he moved into Sales as a wine and food consultant for chefs along the Pacific Coast.

In 1980, John took a hiatus from the winery and founded Seattle’s highly acclaimed Adriatica Restaurant. He later opened Dalmacija Ristoran in Seattle’s Pike Place Market. While at Adriatica, John was selected by Esquire magazine as one of the country’s “Hot new Chefs,” and listed by The Seattle Times as one of the city’s “Top Five Chefs.”

After returning to Chateau Ste. Michelle as Culinary Director in 1990, John hosted the Emmy-nominated cooking show Taste of the Northwest for four years. He then hosted the nationally and internationally syndicated TV show Best of Taste: Travels With John Sarich, with episodes shot on location in Europe, Asia and across the United States. 

In 2010, John released his fifth cookbook, Chef in the Vineyard. His previously published cookbooks, John Sarich’s Food and Wine of the Pacific Northwest, John Sarich at Chateau Ste. Michelle, Best of Taste: Flavors of the Pacific Northwest, and Entertaining Simply continue to inspire cooks around the world. For John, educating others about the joy of wine and food is not simply a job, it’s his driving passion. His extensive culinary program and infectious enthusiasm for matching wine and food are establishing Chateau Ste. Michelle as a dominant focus in the Northwest.

Next stop is Columbia, where urban excitement and college-town atmosphere create a destination that’s “fun, funky and surprisingly sophisticated.” The city showcases an eclectic mix of memorable restaurants, coffee houses, shops, music venues, art galleries and more for visitors.

Our hosts will provide up to a $200.00 travel allowance toward airline expenses. Ground transportation will be provided from Kansas City International Airport and Lambert International Airport in St. Louis or Columbia Regional Airport. Your inbound flight needs to arrive no later than 2:00 p.m. on Saturday, May 21st in order to arrive in Central Missouri for a 6:00 p.m. dinner. FYI: Delta serves Columbia Regional Airport, which offers convenient connections through Memphis. Applications must be submitted to IFWTWA by March 5. Journalists will be qualified by the hosts prior to acceptance. This trip is open to 8 – 10 members.

We invite members of IFWTWA to experience the world-class attractions and the bucolic coastal communities of Monterey County.  Renowned for its premium accommodations, restaurants, wineries, and scenic beauty, this media tour will also uncover some of the hidden jewels of the county during this 3-night, 4-day tour.  The tour is available to journalists on assignment.  Selected journalist will be hosted to accommodations and meals, and will be provided a $250 travel rebate. Journalists will be selected on March 31st.

In September 2007, Angie Roberts was named executive chef of BOKA KITCHEN + BAR, a vibrant blend of lounge and restaurant located at Seattle’s premier luxury destination, Hotel 1000. Leading a highly collaborative, talented team, Roberts presents a kitchen with boundless creativity and an affinity for local, seasonal and organic ingredients.  Currently, BOKA incorporates 85% organic ingredients in its menu items and is striving for even more.

As a committed advocate of sustainable agriculture and local farmers, Roberts sources a trusted network of local producers and suppliers, which she has established during her 15 years in Seattle.  With her pure, organic cooking-style, Roberts is committed to keeping recipes simple so that her customers can learn to appreciate the flavor and lineage of each ingredient.  Roberts is a true believer in knowing where one’s food comes from and how it was raised or cultivated.

Previously, Roberts held a six-year tenure at the W Hotel in Seattle, where she progressed through many culinary positions, including sous chef for Earth & Ocean restaurant.  During her career at Earth & Ocean, Roberts had the opportunity to accompany Jean Michel Boulet to James Beard House in New York City and worked alongside James Beard Award-winning chefs Johnathan Sundstrom (now chef-owner of Lark and Licorous) and Maria Hines (now chef-owner of Tilth) both of whom also earned honors as a Food & Wine magazine Best New Chef.

Chef Roberts is a native to the Pacific Northwest and grew up in Northern Idaho on her family farm. At age 18, Roberts began her career studying both nutrition and culinary arts at Seattle Central Community College.  Currently, Roberts resides in Seattle and is a member of Slow Food Seattle.  Since joining the culinary team, BOKA has received acclaim in USA Today, Seattle Metropolitan, Edible SEATTLE, Seattle Sound, Sherman’s Travel, and Seattle Magazine.  The restaurant has also been featured on KOMO’s “Go Eat!” and “Extreme Tourist: Off the Beaten Path.”

I’ll be sharing Chef Angie’s: Pumpkin Coconut Soup and Pan Seared Scallops with Butternut Squash Puree on Where and What in the World. The soup will be up on February 8 and the Scallops on February 10, 2011.
